EVANSTON — Following the closing of Main Street Deli months ago, the business has been sold, and a new business will soon take its place. Alex and Marijke Rossi have purchased the business and will soon be opening The Bakery. They hope to be open this week.

EVANSTON — Following the closing of Main Street Deli months ago, the business has been sold, and a new business will soon take its place. Alex and Marijke Rossi have purchased the business and will soon be opening The Bakery. They hope to be open this week.

After practicing as a corporate attorney for 30 years, Alex Rossi retired and he and Marijke moved to Evanston in 2020. Marijke was in the business world for 20 years, owning several businesses of her own until she went to seminary and became an ordained minister. She presided over two churches in Salt Lake City until she also retired in 2020. The couple also own Bison Prairie Farms near Sulphur Creek Reservoir, where they grow a lot of their own food.

“We will be making sourdough bread that we have been selling at the farmers market … but we will also make gluten-free bread, whole-wheat bread and scones,” Alex said. “We will have espresso, coffee, soups, quiches, focaccia and both gluten-free and regular flour breakfast baked goods. We have hired Piersten “Pie” Jones, who worked for the Andersons (of Main Street Deli), to make sweet baked goods.”

The Rossis said they use organic flour and other organic products; they will use coffee that is grown organically and sustainably and will support local producers. They plan to have Austin Webster with Webster’s Mycology display his products in the bakery.

They also plan to have recycle bins in the business to encourage customers to recycle waste. Other plans are to create a children’s corner with books to read.

Joining the Rossis in the business as their accountant is their daughter, Lynda Weiler, who lives in Salt Lake City. Weiler has worked as an accountant for large corporations for 20 years and said she is excited to be able to assist her parents in this new venture.

The Rossis said they plan to be open from 7 a.m. to 3 p.m., Wednesday through Sunday.
